PREPARING : Soak the nest with warm/hot water for about 1/2 hour - 1 hour
STEP 1 : Double boiling - Place the bird's nest in a ceramic pot with water (One cup of water per one piece of nest, please ensure that the bowl is big enough for the nest to expand about 8-10 times bigger) and cover with lid.
STEP 2 : Place the pot with bird's nests into a larger cooking pot and fill with water below the small pot. Cover with lid. Use high heat to bring the water in larger pot to boil. In general, White Nest takes about 45 minutes to 1 hour to cook. While white pieces of the nest/crumbs should take only 30 minutes. Notes, Red Blood Bird's Nest and Cave Bird's Nest needs twice as long in the cooking time.
STEP 3 : After cooking, turn off the heat and remove the lid to prevent it from over cooking. Add a little rock sugar, honey or milk and it is ready to be served. Left over cooked nests can be placed in the refrigerator to chill and serve within 3 to 5 days.
Rock Sugar (Use suitable amount of rock sugar according to personal preference.)
Water (3/4 bowl for stewing)
COOKING : Prepare the bird's nest (see the preparing section). Gently split the soaked nest into separate strips. Place it into the simmering pot along with the dried and smoked longan and water. Simmer in low heat for about 30 minutes. Remove from heat.
